Creamy Vegan Peanut Butter Bars are here ☺️ These were inspired by my lemon bars, and when I thought of this peanut butter version I had to try it. Although I have to admit I haven’t been the biggest fan of peanut butter flavoured desserts in the past, but I’m so glad I gave this a shot because I love them!
The creamy filling goes perfectly with the soft biscuit base, topped off with crunchy chopped peanuts and a drizzle of white chocolate. They’re also gluten-free and 12 ingredients if you include the optional chocolate drizzle on top.
A note for you:
I used a vegan white chocolate by Sweet William that I found at a Coles supermarket. If you can’t find a vegan white chocolate, vegan dark chocolates are normally easier to find and would work just as deliciously too. Skipping it all together also works great.
Skip the sea salt flakes if the peanut butter you use includes salt, or add to taste.

*Here in Australia, cornflour is the same as cornstarch. It is for thickening purposes and is white, not yellow. (I’ve heard in America, cornflour is called cornstarch).
