These are the best dam chocolate chip oat cookies I’ve ever tasted!
They’re crispy on the outside, soft and slightly chewy on the inside.
They’re incredibly tasty. The secret? I believe it’s melting the coconut sugar which means every bit of the cookie has a really lovely flavour.
They’re vegan, gluten-free if you tolerate oats or use gluten-free oats, super easy to put together and one ‘bowl’ (well, actually pot).
The funny thing is, is that these actually originated from another recipe which went wrong. I was left with a bowl of flaxseeds, coconut oil, coconut sugar and vanilla, and so not to waste, I decided to put a cookie together, and here we are!
If you can’t find vegan chocolate chips, chop up some vegan chocolate into small pieces instead.
I suggest refrigerating your chocolate beforehand, as you’ll be adding it to a slightly warm cookie dough. If not the chocolate chips will melt once in the dough and it’ll become a bit of a melty mess.
To make these cookies healthier, use naturally sweetened chocolate or a dark chocolate with the highest percentage you can find, which will have less sugar.
