No-Bake Chocolate Coconut Slice, I think, is the perfect treat! The base reminds me of a raw chocolate brownie, with fluffy coconut, and a thin chocolate layer that’s smooth but also has a slight crunch to it.
It’s for sure reminiscent of a bounty bar! For those who don’t know what they are, it’s a chocolate coated coconut bar, sooo like that, but add on a brownie base on top of it, (well, technically below it). Plus theses are healthier, although don’t get me wrong, they’re still extreeeemely decadent.
These are a little bit more work than say, my Creamy Chocolate Freezer Fudge, with 3 layers and all, but don’t worry, not too much more, and with 11 ingredients (and that’s including a pinch of salt!), it’s definitely not difficult.
I cut mine into 10 large bars at first, but after photographing them, I found that 20 squares are a little bit more appropriate due to the richness, and have been cutting them that way since.

*I purchase my buckwheat groats at my local supermarket in the health food isle. You can also use 1 cup desiccated coconut as a replacement.
**I haven’t tried this myself, but I imagine maple syrup would work here too.
*** If you’re using a high speed blender when mixing the ingredients for the filling, it’s easier to add the liquid items first followed by the remaining items to make it easier to mix. You may also want to start with half of the shredded coconut, mix, then add the rest.
