My version of the lamington, a healthier Vegan Lamington Slice! They’re:
- made healthier by replacing plain flour with a mix of oat flour and almond meal
- gluten-free if you can tolerate oats or find gluten-free oats
- one bowl making it super easy to put together
- awesome for those who don’t want to spend the time or make the mess of dipping individual cakes into chocolate
The cake is slightly dense, which I prefer with a thin layer of chocolate and coconut on top. Feel free to add more chocolate if you prefer a thicker layer!

*to make 1 1/2 cups of oat flour, blend 1 1/2 cups of rolled oats until it becomes a flour consistency.
